3 Quick Lunches For Busy Women Who Want To Lose Weight
Every Monday and Wednesday I work from home. I do this so that I can spend time with my son and look after him before he starts at his new Nursery.
We’ll either go swimming, go for a walk in the local fields, go to the park to play or mess around in the garden. When the weather isn’t quite so glorious, we’ll head to soft play, the local trampolining centre or bake cakes and watch films.
Looking after him and having fun is my main priority on these days. Work comes next. In order to be productive and keep my business moving I have to squeeze it into the gaps. I’ll work for a bit in the morning before he wakes up, during the day when he sleeps and again in the evening when my wife gets home from work. My spare time on these days is limited.
When time is of the essence, spending ages in the kitchen cooking and prepping food just doesn’t make sense. I need to be able to grab something from the fridge that is either ready to eat or takes just a few minutes to prep. I have 3 main “go-to’s” for this exact situation, all of them take less than 5 minutes to prep.
- Last night’s dinner - This is our most common method. When we make dinner, instead of cooking for the 2 of us, we’ll cook enough for 4 or 6 people and save the remaining portions in the fridge or freezer for another quick meal. You can then quickly reheat the food up when you want it the following day.
- Pre-cooked chicken breast - There’ll usually be 1-2 chicken breast in the fridge. This will probably be leftovers from a dinner, so no extra cooking. Add this to a pitta/wrap with a load of salad and you’ve got a tasty and filling lunch in minutes.
- Smoothies - This is my current favourite method. I’ll put 3-4 ingredients into the Nutri-Bullet and whizz it up for a sweet and refreshing glass of goodness.
- 1 scoop vanilla whey protein
- 1 tsp peanut butter
- Handful of strawberries
- 2 tbsps Greek yoghurt
- 1 cube frozen spinach
Eating healthily doesn’t have to be a massively time consuming affair. The way I live my life now, having tasty and nutritious food to hand is of paramount importance.
If you have a busy lifestyle but still want to eat well, then give one of my methods a go. That way you can spend less time worrying and more time doing the things you love to do, in my case that’s taking my son swimming!
